For breakfast, I made what Miki taught me. It's like a thin crust pizza but with eggs and potatoes. Here's the recipe since the link where the recipe is originally from is in Japanese.
i know the presentation isn't clean but oh well.
too lazy to clean up the edges. haha
Ingredients:
1 flour tortilla
2 boiled eggs
2-3 tbsp. mayonaise
2 small potatoes
butter
salt and
grated cheddar cheese
Directions:
Put butter on flour tortilla. Peel and boil potatoes until tender but not too soft. Miki actually taught me to cook the potatoes in the microwave as I have never done so. Cut the potatoes in the desired shape then add water about 1-2 inches deep and set microwave to 5 minutes and that's it! I was so amazed the first time. haha.
In a bowl, dice boiled eggs and add mayo and salt and pepper to taste just like in an egg sandwich. So now we assemble the pizza. First, layer the egg sandwich-like mixture then the boiled potatoes cut into small circles. Grate the cheese on top then broil for 5 minutes or until the cheese is melted. Just to let you know, we didn't realize this is so filling, but it is.
I especially like this kind of 'pizza' because it is thin crust.
I made another one with my own recipe but instead of the egg sandwich mixture, I made a mixture of ground beef and tomato sauce with ketchup and a little dried bay leaves then grated cheese on top. I loved it and Emil did as well!
I also cooked Baked Macaroni today and some granola balls because we love love love desserts! At least now that we are trying to eat healthy, we wont feel guilty of eating too much sugar because the granola balls that I made is raw and vegan. Recipe will be posted soon.
